I've done it--twice. It is very helpful on steep trails. Mine also lets you turn on the rear camera while moving which is helping when towing. I can see the hitch and all the connections without stopping.
Bilsteins (et al) will absolutely lift a vehicle and, yes, lots of people use them for exactly that reason. There are different settings on them for the amount of lift you want.
