2019 2.7 Starter Sticking?

It does this very random grinding rattly noise on start up. It can go more than a week without making it at all. If it’s longer induration, I can turn the key off and immediately restart without it making any noise at all. I’ve been all over it and about to give up. Sticky starter bendix??

Very Likely.

Prolly best to just replace starter/solenoid as a complete unit.

Don't forget to disconnect the battery when doing the work.
