Still a little rare too. That’s the way I like them.

I think u may be seeing the smoke ring.... these were not rare at all, i cant do med rare with beef even, and this was pork.
Could be the lighting, could be camera, most likely the smoke ring tho.
Meat closest to the bone is white.
